Creole cooking in the Caribbean carries the influence of African, French, Spanish and Portuguese cuisines, and  stands out for its bold flavors and colorful ingredients. Sarah Chan of Calypso Kitchen showcases Creole home cooking with a menu of accra (bacalao fritters) and mango sauce; green banana salad; oxtail stew; and coconut red beans and rice.
