Plant-Based Mashed Potatoes
Potatoes are a staple at every holiday meal, but mashed potatoes are often filled with butter, cream, or cheese. Vegan options are sometimes gluey or bland. The solution? Plant-based sour cream! The sour cream gives a tangy flavor and creamy texture to vegan mashed potatoes.
MAKES 4-6 SERVINGS
Ingredients
- 3 medium-large yellow potatoes (about 5 cups chopped)
- 4 Tbsp vegan butter
- 1 Tbsp oat milk
- 3 Tbsp vegan sour cream
- Salt and pepper, to taste or about 2 teaspoons of each
Method
- Set a pot of salt water to boil on high. While you wait, chop your potatoes into large cubes. Optional: Peel your potatoes.
- Boil your potatoes until they’re fall-off-a-fork tender. Drain and set in a large bowl.
- Mash your potatoes. Once the big lumps are gone, add in your salt, pepper, and butter. Mash until well combined.
- Add in your sour cream and oat milk, mash until you reach the desired texture and well combined. Do not blend or stir your potatoes, continuing to mash keeps them fluffy.
