Simple Cozy Chili
The snow season is creeping in and we’re enjoying warm meals to keep cozy! This simple chili recipe features classic ingredients and is the perfect meal to feed many.
MAKES 4-6 SERVINGS
Ingredients
- 1 lb ground beef (or preferred protein)
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 1 can (6 oz) tomato paste
- 2 cups beef or vegetable broth
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp oregano
- Salt and pepper to taste
Method
- In a large pot, brown the ground beef over medium-high heat
- Add diced onions and minced garlic; sauté until onions are softened.
- Add diced bell pepper and cook until softened.
- Stir in kidney beans, black beans, diced tomatoes, and tomato paste.
- Pour in broth and stir well.
- Add chili powder, cumin, paprika, oregano, salt, and pepper; adjust seasoning for taste.
- Bring to a boil, then reduce heat to low. Cover and simmer for at least 30 minutes.
- Serve with your favorite toppings!
