Rainbow Veggie Noodle Bowls
Ingredients
For the bowls:
- 4 oz. of rice noodles
- 1 red bell pepper
- 4 small tomatoes, halved
- 1 large mango
- 1 yellow bell pepper
- 1 carrot
- 2 sprigs of mint
- 1 avocado
- ½ cup of broccoli
- 4 radishes
- 1 cup of shredded purple cabbage
- Chopped peanuts, optional
For the dressing:
- ¼ cup of rice vinegar
- 2 Tbsp. of lime juice
- 1 minced garlic clove
- 2 Tbsp. of white sugar
- ¼ tsp. of red chili pepper flakes
- 1 Tbsp. of fish sauce
Method
- Cook your rice noodles according to the package and then set aside to cool.
- Slice your bell peppers, carrot, mint, avocado, and radishes to about three times the width of the noodles. Dice your mango, broccoli, and avocado to your desired bite size.
- Combine the dressing ingredients by shaking them together in a jar or whisking until combined.
- Place half of the cooled noodles in each bowl and divide up the toppings. Arrange the toppings in a rainbow, from red to purple.
- Drizzle dressing over the top and top with chopped peanuts, if desired. Enjoy!
Layered Rainbow Smoothies
Ingredients
- 2.5 bananas
- 12 oz. of your preferred yogurt
- ½ pound of strawberries
- 6 oz. of pineapple
- 3 oz. of cantaloupe
- 1 navel orange
- 2 kiwis
- Handful of spinach
- 6 oz. of blueberries or blackberries
Method
- Using the above ingredients you will create four separate smoothies which you will then pour in layers. Each layer will contain 3 oz. of yogurt and half of a banana as the base, blended with the respective colorful fruits.
- The blue-purple layer, which you will pour first, contains 3 oz. of yogurt, half of a banana, and blueberries or blackberries. On top of this layer you’ll add a smoothie made of spinach, kiwis, half of a banana, and 3 oz. of yogurt. The next layer consists of 3 oz. of yogurt, half of a banana, and the pineapple. The next layer contains 3 oz. of yogurt, half of a banana, cantaloupe, and a peeled and seedless orange. The top, red layer will contain 3 oz. of yogurt, half of a banana, and strawberries.
- Add a slice of pineapple for garnish and enjoy!
Rainbow Fruit Kebabs with Yogurt Dip
Ingredients
For the kebabs:
- 1 pint of raspberries
- 1 orange, cubed or cut into small wedges
- 1 mango, cubed
- 2 kiwis, cubed
- 1 pint of blueberries
- 1 pint of blackberries
- 1 bag of purple grapes
For the yogurt dip:
- 16 oz. of greek yogurt, vanilla if your prefer sweet yogurt
- 2 tsp. of honey
- The zest of one orange
Method
- Slice and dice your fruit respectively.
- Poke a kebab skewer through one piece of each fruit in this order: raspberry, orange, mango, kiwi, blueberry, blackberry, then grape. Set aside in the fridge while you make the dip.
- Stir together the yogurt, honey, and orange zest until fully combined. Add a pinch of the orange zest on top for plating.
- Enjoy your kebabs dipped in the yogurt!
Easy Rainbow Fruit Tart
Ingredients
- Premade 9-inch tart shell
- 1 pint of strawberries, sliced
- A quarter of a cantaloupe, sliced
- A quarter of a pineapple, diced
- 2 kiwis, sliced
- 1 pint of blueberries
- 1 pint of blackberries
- 8 oz. of sour cream
- 8 oz. of mascarpone
- 3 Tbsp. of sugar
- Zest of 1 lemon
Method
- Bake the tart shell according to the package instructions. Let the shell cool completely.
- Mix the sour cream, mascarpone, sugar, and lemon zest with a stand or handheld mixer until the sugar is completely dissolved. Spread the cream filling evenly in the tart shell and chill in the fridge for an hour.
- Decorate with the fruit. Lay the fruit in circles starting with strawberries on the outside and blackberries in the middle of the tart. The order of fruit should be strawberries, cantaloupe, pineapple, kiwi, blueberries, then blackberries.
- Slice and enjoy!
